Healthy Chicken Broth

3 skinless chicken pieces
2 onions; peeled, quartered
2 carrots; chopped
4 celery stalks; chopped
2 garlic cloves; chopped
6 parsley sprigs
1/2 teaspoon thyme
1/2 teaspoon savory
1 bay leaf
1/2 tablespoon salt; (optional)
1/2 teaspoon poultry seasoning
1 teaspoon turmeric
3 quarts water

Put all ingredients into kettle, cover, bring slowly to a boil and skim off any surface fat and froth. Lower heat and simmer (covered) for two hours. Strain, cool, cover and freeze for future use. (Option: Remove chicken from bones and keep in unstrained stock.) This recipe yields 3 quarts or 12 servings of broth. To make Healthy Chicken Noodle Soup: To 6 cups chicken stock, add 1 cup shredded chicken, 1/2 cup sliced green onion, 1/2 cup thinly sliced mushrooms, 1/2 cup uncooked vermicelli (thin) noodles and 1 tablespoon honey. Cook all ingredients in a pot until noodles are done. This recipe yields 6 servings. Nutritional Analysis Per Serving With Noodles: Calories 70; Fat (grams) 1; Percent calories from fat 12; Percent polyunsaturated 3; Percent saturated 4; Percent monounsaturated 5; Cholesterol (milligrams) 18; Sodium (milligrams) 250; Protein (grams) 6; Carbohydrate (grams) 10; Fiber (grams) 1.
