Italian Patties With Prosciutto And Cognac Sauce

main dish, poultry, low fat, turkey

1 pound ground turkey
1/4 pound chopped Prosciutto ham
1/4 cup flour
1 tablespoon butter or margarine

1 tablespoon butter or margarine
1 tablespoon flour
1 cup skim milk
1 tablespoon lemon juice
1 tablespoon cognac
Salt; to taste
1/4 teaspoon nutmeg

In a small mixing bowl, combine the ground turkey and chopped Prosciutto ham. Form into 4 patties and dust with flour. Melt 1 tablespoon of butter or margarine in a skillet and brown patties over medium heat. Continue cooking for about 10 minutes or until white throughout. Remove to a heated platter. Melt the remaining butter or margarine in the skillet. Add the flour and stir, mixing the butter, flour and pan drippings thoroughly. Add the skim milk, lemon juice and cognac. Heat until thickened. Season with salt to taste. Serve patties on warmed plates. Spoon sauce over patties and sprinkle with nutmeg. This recipe yields 4 servings.
