Steak With Steamed Vegetables, Soba Noodles And Ginger

main dish, low fat, beef

12 ounces loin steak
1/2 pound soba noodles; ready to cook
2 cups fresh asparagus; cut 1' segments
2 cups broccoli florets

1/2 cup reduced sodium soy sauce
1/3 cup rice wine vinegar
1 tablespoon sesame oil
1 piece fresh ginger - (1 1/2' long); peeled, grated
1 teaspoon sugar
Freshly-ground black pepper; to taste

Cook steak -- grill, broil, or fry in a non-stick pan until medium-rare. Set aside on covered platter to keep warm. Cook soba noodles in simmering water until almost tender. While noodles are cooking, steam the vegetables until tender-crisp. Combine sauce ingredients. Heat through. Drain soba noodles, rinse and redrain. Toss vegetables with the noodles. Place onto plates. Slice steak across grain into 1/2-inch strips. Arrange on top of vegetables and noodles. Top with sauce. Serve immediately. This recipe yields 4 servings.
