Chocolate Chip Cookies

1 cup unsalted margarine
--at least 60% vegetable oil
1 cup sugar
1/2 cup packed brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
2 egg whites
2 teaspoons vanilla
2 1/4 cups all-purpose flour
1/2 cup oat bran*
3 ounces miniature semisweet chocolate piece
--1/2 cup

Beat the margarine in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add sugar, brown sugar, baking soda, and salt; beat well. Add egg whites and vanilla; beat till well combined. Beat in as much flour as you can. Stir in remaining flour and oat bran with a wooden spoon. Stir in chocolate pieces. Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet.

Bake in a 375F oven for 8 to 10 minutes or till edges are lightly browned. Remove the cookies from the cookie sheet and cool on a wire rack. Makes about 50.

*If you do not have oat bran on hand, you can use rolled oats. Process 2/3 cup rolled oats in a covered blender container or food processor bowl till ground; substitute for the 1/2 cup oat bran.
