2 teaspoons olive or vegetable oil
Heat oil in 10-inch nonstick skillet over medium-high heat. Saute onion and garlic in oil. Stir in remaining ingredients except noodles; reduce heat to medium. Cover and cook about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft. Serve over noodles. 4 SERVINGS (ABOUT 3/4 CUP CHICKEN MIXTURE AND 1/2 CUP NOODLES EACH). MICROWAVE DIRECTIONS: Omit olive or vegetable oil. Mix all ingredients except noodles in ungreased 2-quart microwavable casserole. Cover loosely and microwave on high 6 to 8 minutes, stirring every 2 minutes, until mixture is hot and tomatoes are soft. Serve over noodles.
