Marinated Beef And Pasta Salad

1 pound mostaccioli or ziti
2 tablespoons vegetable oil
3 tablespoons lemon juice
2 tablespoons red-wine vinegar
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh thyme
2 tablespoons dijon mustard
1/2 cup fresh parsley; chopped
10 large mushrooms; sliced
2 cups flank steak or roast beef; julienned
2 cups halved snow peas
1 red bell pepper
--ribs and seeds removed; julienned
salt; to taste
freshly ground black pepper; to taste

1. Prepare pasta according to package directions; drain.

2. In large bowl, combine vegetable oil, lemon juice, vinegar, oregano, thyme, mustard, parsley, mushrooms and steak. Add snow peas and bell peppers; mix thoroughly. Add pasta and mix again. Serve immediately, or refrigerate 1 hour and serve cold.

Makes 10 servings. Preparation time: 20 minutes. Cooking time: 10 minutes.

Per serving: About 286 cal, 14 g pro, 40 g car, 8 g fat, 25% cal from fat, 17 mg chol, 143 mg sod, 5 mg fiber.
