Sweet Onion And Fennel Salsa

condiments, pickles & relishes

1 cup chopped texas sweet onion
1 cup chopped fennel
--white and green parts
--plus some leaves
1/2 cup chopped ripe tomatoes
1/4 cup chopped red or yellow bell pepper
1 tablespoon minced jalapeno pepper
--or serrano pepper
--plus more to taste
1/4 cup chopped fresh cilantro
1/4 cup olive oil
salt; to taste
black pepper; to taste

In medium bowl, combine onion, fennel, tomatoes, bell pepper, jalapeno pepper, cilantro, oil, salt and pepper. Let stand at room temperature 30 minutes to let flavors blend.

Makes 10 servings. Preparation time: About 25 minutes. Marinating time: About 30 minutes.

Per serving: About 71 cal, 1 g pro, 5 g car, 6 g fat, 72% cal from fat, 0 mg cholesterol, 153 mg sod, 1 g fiber.
