Sourdough Muffins1/2 cup Sourdough Starter1 3/4 cups All-Purpose Flour 1/4 cup Sugar 2 1/2 teaspoons Baking Powder 1 beaten Egg 1/2 cup Milk 1/3 cup Cooking Oil
Bring Starter to room temp. In large bowl
stir together all dry ingredients.Make a well in center of mixture.
Combine remaining ingredients and add to Flour mixture. Stir until just moistened and still lumpy. Using a tablespoon, put into greased muffin pan. Each cup should be about 2/3 full. Bake at 400 deg. for 20 minutes.
Makes about a dozen Muffins. |
Sourdough Honey MuffinsHoney Wheat Muffins1/2 cup Starter1 cup All Purpose Flour 1/2 cup Whole Wheat Flour 1 teaspoon Baking Powders 1 Egg 1/3 cup Honey 1/4 cup Oil 1/4 cup Milk 1/2 teaspoon Grated Lemon Peel
Bring Starter to room temp. In a large bowl mix all dry ingredients together and make a well in the center. Mix remaining ingredients and add to dry mix.
Stir until moist and still lumpy, then using a spoon , fill cups in a greased muffin pan about
1/2 to 2/3 full. Bake in a 400 deg. oven for about 25 min.
Makes about a dozen Muffins. |

Sourdough Cornbread Rolls1 cup Starter1 pkg Active Yeast 1/2 cup warm water 4 cups All-Purpose Flour 3/4 cup Yellow Cornmeal 1/4 cup Sugar 1/4 cup Butter or Margarine 1 Egg 2 teaspoons Salt 1/2 teaspoon Baking Soda
Bring Starter to room temp. In a large mixing bowl dissolve Yeast in 1/2
cup warm water. Mix dissolved yeast, 1 cup of flour,sugar, butter, egg, salt, Starter and cornmeal
together in mixer bowl and beat on slow speed about 30 seconds and scrape sides of bowl.
Beat at medium speed about 3 1/2 minutes. Mix the baking soda with 2 cups of the flour and stir into mixture. Stir in as much of the flour as you can mix in with a spoon. Lightly flour a bread board and turn mixture out onto it. Knead in enough flour to make a medium stiff dough that is elastic. Shape in to a round dough and put in a bowl and cover and let rise until it has doubled in size.
Punch down and cut in half. Let the dough rest for about 10 minutes and then shape in to your prefered shape, place about 2 inches apart on a cookie sheet and let rise about 40 minutes. Bake for 20 min or until desired brown color at 375 degrees. Makes 20 to 24 rolls |
Sourdough Citrus Rolls3/4 cup Starter1/2 cup Sugar 2 tablespoons shredded Orange Peel 4 tablespoons Butter or Marg. 2 teaspoons Cinnamon 2 cups All-Purpose Flour 2 teaspoons Baking Powders 1 teaspoon baking Soda 1/2 cup Buttermilk
Bring the Starter to room temp.Mix flour, baking powders and baking soda
with buttermilk and starter in a mixing bowl. Lightly flour a bread board and turn out dough onto it.
Knead for about 20 times. Roll into a square of about 12 inches in size. Melt the butter or margarine and brush dough with about 3/4 of it. Mix the sugar with orange peel and cinnamon and sprinkle on top of dough square. Roll dough like a jelly roll and slice into 10 or 12 pieces. Place slices into a buttered glass baking dish and brush tops with remaining butter. Bake 25 minutes at 450 deg. or until golden brown. Remove immediately and let cool on a rack.
